Slow Cooker Hoppin’ John

For maximum good luck in the New Year, the first thing that should be eaten on New Year's Day is Hoppin' John according to many people who were brought up in the southern United States.
The plate has symbolic meaning for the New Year and black-eyed peas represent coins and tomatoes mean good health. The dish is served with collard greens, which represents money, and corn bread symbolizing gold. 

Ingredients: 
Hoppin John
  • 4 strips of thick-cut bacon diced or smoked turkey
  • 1 small onion, diced
  • ½ teaspoon of crushed red pepper
  • 1 cup dried black-eyed peas, rinsed and cleaned
  • 1-15 ounce can diced tomatoes, drained
  • 1 ½ cups rice or brown rice
  • ½ tsp salt



 Preparation: 
1. Place bacon in a saucepan and cook over medium heat until just beginning to crisp; spill off excess fat. (Or cook smoked turkey and use to replace the bacon.) Add onion and cook, stirring until softened about 5 minutes.  Scrape bacon and onion into slow cooker.  Add crushed red pepper, peas and 4 cups of water and stir.
2. Cover and cook on low until peas are nearly tender, 3-4 hours.
3. Stir in tomatoes, rice and salt.  Cover and continue to cook until rice is tender and has absorbed all liquid, about 1-1.5 hours.  Fluff with fork and serve with collard greens and small piece of corn bread.
