Green Apple Slaw

Take advantage of the fresh apples offered this week at the Bergen County Farmers Market to make this slaw. Since the apples aren't cooked, you could use any variety that you enjoy fresh, especially ones with a firm, crisp flesh.  Look especially for Macintosh, Gala and Paula Reds.  Gingolds and Jonamacs will also be available.  What a great opportunity to try many varieties!

The Bergen County Farmers Market is open at One Bergen County Plaza, Hackensack, on Wednesdays this summer from 11:00 a.m. to 2:00 p.m.

Ingredients: Green Apple Slaw
  • 1/2 cup light mayonnaise or salad dressing
  • 2 teaspoons honey
  • 1/2 tsp. poppy seed
  • 4 fresh apples, quartered and thinly sliced (4 cups)
  • 1 Tbsp. lemon juice
  • 1 1/2 cups coarsely chopped cabbage
  • 3/4 cup halved green seedless grapes
  • 1/2 cup thinly sliced celery

  1. For dressing:  In a small bowl, stir together mayonnaise, honey and poppy seeds.  Set aside.
  2. In a large salad bowl, combine apples and lemon juice; toss to combine.  Stir in cabbage, grapes and celery.  Pour dressing over mixture; toss gently to coat.  Cover and chill in the refrigerator for 1 to 24 hours before serving.

Makes 12 servings, 3/4 cups each

Per Serving:  67 Calories; 3 g fat; 10 g carbohydrates; 73 mg sodium
