Apple and Carrot Salad

Jamie, a program analyst and administrator for the Commission on the Status of Women, Department of Human Services, contributed this to the Fall Recipe Challenge for Bergen County employees.

Apple and Carrot Salad with Almonds

  • 2 large apples, cored and choppedApple Carrot Salad
  • 2 cups baby carrots, chopped
  • 1 Tbsp. lemon juice
  • 1 Tbsp. olive oil
  • 1 ounce grated cheese
  • 1 tsp. sugar
  • 1/2 tsp. black pepper
  • 1/3 cup almonds, chopped


  1. In a large bowl, mix apples and lemon juice.
  2. Add carrots, almonds, grated cheese, sugar, and olive oil.
  3. Mix thoroughly.
Tip:  You may substitute sugar with Splenda or any artificial sweetener.  You can also add raisins.
Makes approximately 6 servings.

Per Serving: 124 calories, 6 g fat, 12 g carbohydrates, 3 g protein, 102 mg sodium.
