Grilled Peach Lollipops

August 30:  Grilled Peach Lollipops with Raspberry Coulis 

A Wonderful way to serve fresh summer peaches!

  • 6 Peaches, halved and pit removed
  • 1 C Raspberries, fresh or frozen
  • 2 Tbsp. Sugar
  • 1.5 Tsp. Lemon Juice
  • 2 Tbsp. Water
  • 1 Tbsp. Olive Oil
  • 12 Skewers
  • Light whipped cream and mint leaves, optional

Mix raspberries, 2 Tbsp. sugar and water in a small pot and cook until mixture
reduces (approx 10 min).

Put mixture through a strainer and immediately add lemon juice.

Serve warm or let chill in refrigerator.

Put skewer through the peach, brush peach half with olive oil, and grill for 5-10 minutes until it begins to brown.

Serve peach lollipop on a plate with approximately 1 Tbsp. of raspberry sauce for dipping.

A teaspoon of light whipped cream and piece of fresh mint can be added as a garnish

Makes 12 portions (1/2 peach each)
